Happy Monday! If you are like me, you are starting to think of what will be for dinner this week. We are on a budget as a one income family and it’s always a challenge to find recipes that are kid friendly, inexpensive, and quick to prepare. My go-to meat is Hillshire Farm smoked sausage. Everyone loves it, it’s extremely affordable to stock up on, and it seems like there are a million ways to prepare smoked sausage recipes. I picked up a few packages from Kroger (near the lunch meat). Between 3/30-4/19/16 you can pick up 2 Hillshire Farm sausages for only $5 while supplies last. Today, I wanted to share THREE of my favorite recipes! (For more Hillshire Farm recipes, click HERE.)
Disclaimer: I am NOT a food blogger. I will not be telling you to use unicorn tears or salt from the dead sea or an herb you have never heard of. I want to give you the “bones” of a recipe and encourage you to jazz it up however you like! Sometimes, when I am looking up a recipe, I have to skim it for the core ingredients because there are so many other suggested spices etc. With that said, my recipes might look pretty basic, but I encourage you to play around with spices, garnishes, and whatever else you can think of!
1 | Smoked Sausage Breakfast Casserole
1 package (14 oz) Hillshire Farm Smoked Sausage, diced
1 package (32 oz) Hashbrown Potatoes, thawed
1 onion, diced
2 cups grated cheddar cheese
8 eggs
1 cup heavy cream
1 tsp garlic salt
Salt/Pepper to preference
Instructions:
Preheat oven to 350 degrees
Sautè diced onion and sausage until sausage is browned and onion is translucent, set aside.
Beat eggs with cream, salt, pepper, and garlic salt, set aside.
Grease 9×13 baking dish with cooking spray.
In large mixing bowl, combine potatoes, sausage and onions. Mix.
Place potato/onion/sausage mixture in baking dish and pour eggs over it evenly.
Sprinkle grated cheese evenly over the top.
Cover with foil and bake for 30 minutes.
Remove foil and bake for another 30 minutes.
2 | Smoked Sausage Penne with Cheesy Tomato Sauce
1 package (14 oz) Hillshire Farm Smoked Sausage, sliced into 1/4 inch rounds
1 package (16 oz) penne pasta
1 can (16 oz) tomato sauce
2 cups grated cheddar cheese
8 eggs
1/2 cup heavy cream
1 tsp garlic salt
Salt/Pepper to preference
Instructions:
Sautè sausage until browned.
In large skillet, combine tomato sauce, cheese and cream; bring to simmer.
Add sausage to sauce mixture and cover, continuing to simmer.
Boil pasta until al dentè.
Serve sauce over pasta.
3 | Smoked Sausage, Potato and Kale Soup
1 package (14 oz) Hillshire Farm Smoked Sausage, sliced into 1/4 inch rounds
1 package (32 oz) hash brown potatoes, thawed
1 carton (32 oz) chicken stock (32 oz)
1 tablespoon miced garlic
1 onion, diced
3 cups raw kale, chopped
1/2 cup heavy cream
1 tablespoon garlic salt
Salt/Pepper to preference
Instructions:
Sautè garlic, onion and sausage until sausage is browned.
In large pot, combine chicken stock, potatoes, sausage, garlic and onion; bring to boil.
Turn heat to medium-low and simmer for 15 minutes.
Stir in kale and cream.
Simmer for 5 more minutes, then serve.
