Healthy Black Bean Brownies

Did you just read “Healthy Black Bean Brownies” and raise an eyebrow? So did my husband, but hear me out. Guys. I have found the ultimate versatile ingredient. I’m not kidding. What else can go in soups, casseroles, burgers, and even DESSERTS (yes, desserts)?! Bush’s Black Beans, that’s what! I had the opportunity to create a recipe with Bush’s Beans for you, so instead of going for the regular dishes you might relate black beans to, I decided to be a little risky and try black bean brownies. It seemed weird, but that just intrigued me more. After looking over several recipes around the web, I came up with my own version and it turned out to be PERFECT.

There is a Bush’s Beans for any recipe or diet. They are a quick, easy, inexpensive and healthy option to add to any meal. I found mine easily at my local Walmart. They are a pantry staple in this house and a great source of protein to have on hand.

Not only are these brownies a healthier version of the “regular” kind, they are gluten free and vegan, too! No one in my house could taste a difference and no one could believe there were beans in these brownies. I can’t wait for you to try this recipe to see for yourself! Without anymore chatter from me, here’s all the scoop.

Ingredients:

1 15 oz. can Bush’s Black Beans (drained and rinsed)

1/2 cup quick oats

1/3 cup sugar

1/4 cup canola oil

2 tbsp cocoa powder

1/4 tsp salt

2 tsp pure vanilla extract

1/2 tsp baking powder

1 cup chocolate chips

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Combine all ingredients except for chocolate chips in food processor and blend thoroughly.

Mix in chocolate chips.

Pour batter in greased 8×8 pan.

Sprinkle additional chocolate chips on top for fun and presentation!

Bake for 20 minutes.

Let cool for 15 minutes before serving.

I might eat the whole pan by myself and not feel guilty about it, because I have convinced myself this is healthy. (I mean it mostly is, right?) PLEASE try this out and report back! I would love to know how your turned out!
