Slow Cooker Chicken Recipe

“Does anybody have any good slow cooker recipes?”

Just file that under “Questions I never asked before I had kids”.

No, really. I never understood the magic and beauty of the slow cooker. Admittedly, my domestic skills fail me sometimes. Namely, my difficulty to do multiple things at once. This is precisely why I have trouble getting dinner on the table most nights. And when I say table, I mean in your lap on the couch. The other day, Grayson actually said “Can we eat at the table like they do on TV sometimes?” Oops.

Anyway, slow cooker meals are a lifesaver. During the non less hectic part of the day, I can easily throw some ingredients into my slow cooker and not think about it again until it’s time to serve it that night. Since I have adopted this life saving meal magic, I have fallen in love with several recipes that have become favorites.

One of our very favorite recipes is a Fiesta Chicken recipe that my Mother-In-Law shared with me.

Slow Cooker Fiesta Chicken

Ingredients:

4 Market Pantry frozen chicken breasts, thawed

1 pkg spicy ranch dressing mix

1 can Market Pantry whole kernel corn, undrained

1 can Market Pantry black beans, drained

1 can Market Pantry diced tomatoes and green chilis

1 8oz Market Pantry block of cream cheese

Instructions:

1 | Place all ingredients in slow cooker in order listed above.

2 | Cook on low 8-10 hours or high 4-6 hours.


3 | Serve over rice or tortillas. It’s SO delicious and could it be any easier?
